Recipe for Success at Roots SteakHouse in Morristown: Run the Place Like a Hockey Team

Chip Grabowski and Bob Moore dedicated their eighth restaurant, Roots SteakHouse, in Morristown on Tuesday. Number nine, Urban Table, is scheduled to open next door in a few weeks.

The secret to their success?

“I look at the whole company as a hockey team,” said Chip, managing partner of Harvest Restaurants, which owns the new Roots.

The steak house opened on Jan. 31 and local dignitaries were invited on Tuesday to toast its health and munch on lobster and steak hors d-oeuvres. Roots is the centerpiece of the ground-floor retail space at 40 Park, a luxury condo complex that replaced the Epstein’s department store near the historic Morristown Green. The developers said they wooed Harvest Restaurants because of the company’s reputation.
